Colder weather is the perfect time for hearty, comforting dishes that warm you from the inside out. This butternut squash and lentil chili has rich flavours and satisfying ingredients, making it a cozy favorite for chilly days.

INGREDIENTS
- 2 cups Vegetable Broth
- 1 Tbsp Coconut Oil
- 1 small White Onion, diced
- 1-2 large Garlic Cloves, minced
- 4 cups Butternut Squash, peeled and cubed
- 3 large Tomatoes, chopped
- 2 Tbsp Tomato Paste
- 1 cup Dry Green Lentils, rinsed
- 2 Tbsp Chili Powder
- 2 tsp Eversio Wellness 6 Mushroom Blend
- 1 tsp Sea Salt
- 1 Avocado, thinly sliced
- 1 cup Fresh Cilantro, chopped
- ½ Lime, sliced
- ¼ cup Unflavored Coconut Yogurt
DIRECTIONS
Heat a large pot over medium heat and add the coconut oil. Add the onion, stir, and cook for a couple of minutes until softened.
Add the butternut squash and cook for another five minutes, stirring occasionally.
Stir in the tomatoes, tomato paste, lentils, chili powder, sea salt, mushroom blend, and vegetable broth. Mix well, reduce the heat to low, and cover with a lid.
Let the chili simmer for 20 to 25 minutes, stirring occasionally, until it thickens and the lentils tender.
Divide the chili into bowls and top with avocado slices, fresh cilantro, a dollop of coconut yogurt, and a squeeze of lime.
Serve warm and enjoy!
