This dip is made with super creamy cannellini beans and some helpful ingredients for added blood sugar balance.

Beans are an excellent way to support healthy blood sugar levels because they contain protein and resistant starch fibre, which helps slow down the digestion and absorption of carbohydrates, preventing rapid spikes in blood sugar levels after meals. We added an extra source of protein and healthy fats to the dip with the addition of hemp seeds.

Cannellini beans bring a smooth, velvety texture to the dip, and the 4 Mushroom Blend (Balance) by Eversio Wellness includes Lion’s Mane, Reishi, Maitake, and Shiitake mushrooms, making it an immune system supporting delicious twist on traditional dips.

Creamy High Protein Cannellini Dip Ingredients

INGREDIENTS

  • 1.5 cups cooked cannellini beans, rinsed (roughly 1 14oz can)
  • ¼ cup hemp seeds
  • 3 Tbsp olive oil
  • ½ lemon, juice + zest (equals 3 Tbsp juice, ½ tsp zest)
  • 1 garlic clove, chopped
  • ½ cup fresh basil, sliced (10-12 leaves)
  • ½ tsp Eversio Wellness 4 Mushroom Blend powder
  • ¼ tsp sea salt

Creamy High Protein Cannellini Dip Recipe

DIRECTIONS

If you don’t have cannellini beans on hand, you can substitute them with another white bean or chickpea.

  1. Add ingredients to a food processor, starting with half the olive oil.
  2. Blend, stopping occasionally to scrape the sides with a spatula.
  3. Add the remaining olive oil and blend until the mixture is smooth and fluffy.

Serve with your favorite fresh veggies, such as sweet peas, radishes, cucumbers, carrots, or thinly sliced beets.

This recipe makes 1.5 cups of dip, perfect for snacking or sharing!
