INGREDIENTS

For the Pesto:

  • 1 cup packed fresh basil leaves
  • 1 cup packed baby arugula
  • ⅓ cup toasted pine nuts
  • ¼ cup nutritional yeast or grated parmesan

  • Salt & pepper to taste
  • Squeeze of fresh lemon
  • 1 ice cube (helps keep the pesto green & vibrant)

For the Pasta:

  • Your choice of pasta
  • 1 cup reserved pasta water (key for a creamy sauce!)

For Topping:

  • Extra virgin olive oil
  • Red chili flakes
  • Fresh burrata
DIRECTIONS

Make the Pesto

Add all the pesto ingredients to a blender or food processor. Pulse until well combined, scraping down the sides as needed. The ice cube keeps the pesto from oxidizing, ensuring a bright green color!

Cook the Pasta
