INGREDIENTS
- 3 organic chicken thighs, boneless, skinless, cut into bite-sized pieces
- 1 tsp coconut oil (or avocado oil)
- 1 small yellow onion, thinly sliced
- 1 large garlic clove, finely minced
- 1 Tbsp fresh ginger, grated
- 2 medium sweet potatoes, peeled and cubed
- 1 tsp 4 Mushroom Blend by Eversio Wellness (4MB)
- 2 cups low-sodium chicken bone broth (or veggie broth)
- 2 small bok choy, white and green parts separated and sliced
- 1 Tbsp mellow miso paste
- 1 cup hot water
- 2 green onions, thinly sliced
- Sea salt to taste
- Optional: chili flakes, sesame oil, or lime wedges for serving
DIRECTIONS
Sauté the base: In a medium pot, heat coconut oil over medium heat. Add chicken and a pinch of sea salt. Sear 3–4 minutes on each side until golden.
Build the flavor: Add onion, garlic, ginger, and bok choy whites. Sauté 2–3 minutes until softened. Stir in the 4 Mushroom Blend to enhance aroma and depth.
Simmer the soup: Add sweet potatoes and broth. Bring to a boil, then reduce the heat and cover. Simmer for 10–12 minutes until sweet potatoes are fork-tender.
Add the greens: Stir in the bok choy greens and cook for 2 minutes, just until they are wilted.
Mix the miso: In a bowl, whisk miso paste with 1 cup hot water (not boiling) until smooth.
Serve: Divide the miso broth between two bowls. Ladle the soup over top and garnish with green onions. Add chili flakes, sesame oil, or lime to taste.
