February is heart health month, so we designed this recipe to give your beautiful heart some extra love!
Here are some of the many benefits of the ingredients:
• Beets are an excellent food for a healthy heart with a good dose of folate, antioxidants manganese and vitamin C, as well as potassium. Beets are also high in nitrates, which help to increase oxygen intake and blood flow, as well as support healthy blood pressure.
• Contains omega-3 fats 2 from walnuts, and monounsaturated fatty acids from olive oil 3. Research shows that eating five servings of nuts per week is associated with a decrease in coronary heart disease events.
INGREDIENTS
2 Beet (large, peeled, quartered)
1 Tbsp Extra Virgin Olive Oil
Sea Salt & Black Pepper (to taste)
2 Tbsp Water (plus more as needed)
1 Pink Grapefruit (peeled, sliced)
2 cups Microgreens
2 Tbsp Red Onion (thinly sliced)
1/3 cup Walnuts (chopped)
Dressing:
2 Tbsp Olive Oil
1 Tbsp Lime Juice
1 Tbsp Dijon Mustard
3/4 tsp Raw Honey
1/2 tsp Rejuvenate Blend functional mushroom powder by @eversiowellness
Pinch pink salt
DIRECTIONS
1. Preheat the oven to 400F. In a small pot, boil beets for 10 minutes. Drain water and add beets to a roasting pan with olive oil and salt. Add 2 Tbsp of water and bake for 20 minutes.
2. Meanwhile mix dressing ingredients in a small mason jar, stir or shake well until blended.
3. To assemble, add all ingredients to a serving dish and toss with dressing.
Makes 1 main dish or 2 side dishes.
