  • 2 eggs, at room temperature
  • ¾ cup cane sugar or date sugar
  • 1 cup plain Greek yogurt, at room temperature
  • ½ cup avocado oil or olive oil
  • Zest of two large lemons
  • ½ cup fresh-squeezed lemon juice
  • 1 tsp vanilla extract
  • 2–3 tbsp poppy seeds

For the Lemon Glaze:

  • 1 cup monk fruit sweetener or icing sugar
  • 1 tbsp fresh lemon juice
  • 2 tbsp milk (dairy or plant-based)

DIRECTIONS

Prep the Pan & Oven

Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper, leaving some overhang for easy removal later.

Mix the Dry Ingredients

Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.

Whisk the Wet Ingredients

In a large mixing bowl, crack in your eggs and add the sugar. Whisk vigorously until the mixture becomes pale and frothy. Then, stir in the Greek yogurt, oil, vanilla, lemon juice, and lemon zest. Your kitchen will already start smelling amazing!

Combine & Fold
