INGREDIENTS
  • 1 Banana (ripe, mashed)
  • 2 Eggs
  • 1 ½ cups Carrots (shredded)
  • ¼ cup Coconut Sugar
  • 1 ⅛ cups Plain Coconut Milk (unsweetened, from the carton)
  • 1 ½ cups Oat Flour
  • ½ cup Coconut Flour
  • 2 tsp Baking Powder
  • ⅛ tsp Sea Salt
  • 1 tsp Ceylon Cinnamon
  • ⅛ tsp Nutmeg
  • 1 tsp 3 Mushroom Blend by Eversio Wellness
  • ⅓ cup Goji Berries
  • Wholesome Ingredients for Mood-Boosting Muffins
    DIRECTIONS
    1. Preheat the oven to 350°F (175°C). Line a muffin tray with unbleached liners.
    2. Whisk together the banana, eggs, carrots, and coconut sugar in a large bowl until smooth. Stir in the coconut milk.
    3. Add the oat flour, coconut flour, baking powder, spices, mushroom powder, and sea salt. Mix until a smooth batter forms. Gently fold in the goji berries.
    4. Divide the batter evenly among the muffin cups. If desired, top with oat flakes for added texture.
    5. Bake for 22 minutes, or until a toothpick inserted into the center of a muffin comes out with a few crumbs. Let cool for 10 to 15 minutes before enjoying.
