Mushroom Powered Mint Chocolate Chip Energy Bites

Want something sweet and delicious to keep in the fridge over the holidays that won't land you on your nutritionist's naughty list?

We've got the perfect (guilt-free) medicinal mushroom upgraded holiday snack that tastes more like a treat from the North Pole! Lion's Mane, cocoa, and mint - OH MY!

Our DELICIOUS mushroom powered recipe for the holidays, will have you wanting dessert first! We're not judging if this is how you get your mushroom supplements in over the holidays. Adding brain boosting mushroom extracts (like the Lion's Mane found in all three Everblends) to your recipes is a great way to invite wellness to your busy days when the calendar gets crazy.

Make these as an act of self-love.  Then, ditch the boxed chocolates and serve these mushroom infused upgrades when it's time for festive treats! SO YUMMY!

Recipe makes 14-18 energy bites. 

INGREDIENTS

  • 1 cup raw cashews 
  • 12 pitted medjool dates 
  • ¼ cup cocoa or cacao powder 
  • 2 tbsp chia seeds 
  • 1 tbsp shredded unsweetened coconut (optional) 
  • 1 tsp peppermint extract 
  • Pinch of salt 
  • 2 tbsp any Eversio Mushroom Extract Everblend 
  • 2 tbsp melted coconut oil 

OPTIONAL 

  • ½ cup dark chocolate chips or chopped dark chocolate bar 
  • 3 candy canes, crushed 

DIRECTIONS

Add first 8 ingredients to a blender or food processor and blend until combined on medium speed. Add in coconut oil and blend again until mixture sticks together. 

NOTE: if dates are a bit dry, soak in warm water for 10 minutes before using. 

Using a medium cookie scoop or tablespoon, scoop the mixture and roll into a ball. Continue with the remaining mixture and place onto a parchment lined cookie sheet or plate. 

OPTIONAL

Crush candy canes into small pieces and place onto a plate. In a bowl, melt chocolate chips / bar.  Dip one side of the energy balls into the melted chocolate then roll in crushed candy cane bits. Repeat with remaining bites.  

Chill in refrigerator for 10-15 minutes before serving. Store in an airtight container. Refrigerate for up to one week.
