The secret sauce to eating more veggies? A Green Goddess Dressing! 

In the colder months, we crave more root veggies that help to retain heat and provide immune supporting properties, like rutabaga, beets, sweet potato & carrots. To add in some vibrant raw nutrients, we use more fresh herbs in our dressings and seasonal fruits like pomegranate. To give our immune system and mood much needed support during this season, we add gut friendly ingredients such as raw sauerkraut and of course, a healthy dose of medicinal mushroom extracts! 

Here's what you will need to make this mouthwatering and warming recipe: 

Beets + Sweet Potato Bowl

INGREDIENTS

  • 1 small rutabaga 
  • 1 medium beet 
  • 2 carrots 
  • 1 sweet potato 
  • 2 tbsp avocado oil 
  • ¼ tsp sea salt 
  • ¼ tsp garlic powder 
  • 1 tsp dried parsley 
  • 6oz of chicken, cooked (or tempeh) 
  • ½ cup raw sauerkraut 
  • ¼ cup pomegranate seeds  

DIRECTIONS (Recipe makes 2 servings)

  • Preheat the oven to 400F
  • Peel vegetables if needed and cut into bite sized pieces
  • Add to a roasting dish and toss with avocado oil
  • Mix together seasoning and sprinkle over vegetables, giving them a quick toss for even coating
  • Roast for 45-60 minutes, tossing once halfway
  • Assemble your bowl with roasted vegetables, heated chicken, sauerkraut, and pomegranate seeds

BALANCE Blend Green Goddess Dressing 

INGREDIENTS

  • 2 cups cilantro, roughly chopped 
  • ½ cup chives, roughly chopped 
  • ½ avocado 
  • ¼ cup extra virgin olive oil 
  • ¼ cup raw apple cider vinegar 
  • ¼ cup filtered water 
  • ¼ cup lemon juice 
  • ½ tsp lemon zest 
  • 2-3 garlic cloves, crushed 
  • ½ tsp BALANCE Blend by Eversio Wellness 
  • ¼ tsp Himalayan salt 
  • ⅛ tsp pepper 

DIRECTIONS

  • Combine all ingredients in a blender & buzz until smooth
  • Use this vibrant dressing on your beets and sweet potato bowl, favourite salad, or as a dip for your veggies! (This recipe makes about 1.5 cups and will last in the fridge for a week)
