Avocado Toast with a Twist ft. 6MB

This Avocado Toast recipe takes a gourmet turn by incorporating Eversio Wellness's 6 Mushroom Blend. This blend, featuring Oyster, Chaga, Tremella, Lion’s Mane, Maitake, and Shiitake mushrooms, is a powerhouse of healthy-aging and antioxidant health benefits, which we can cleverly integrate into our morning routine.

INGREDIENTS

Avocado Toast   

Sourdough   

Avocado   

Pesto  

Beet hummus   

Fresh dill and cilantro   

Sprouts   

Sesame seeds 

 

Homemade Pesto

4 cups fresh basil leaves (packed)

1/3 cup roasted pine nuts or walnuts  

¼ cup olive oil 

½ cup nutritional yeast  

3 tbsp hemp seeds  

3 garlic cloves 

Juice from ½ a lemon  

2 tsp sea salt and fresh cracked pepper  

2 tsp Eversio Mushroom Blend  

 

Homemade Beet Hummus  

1 can chickpeas  

1 large cooked beet or 2-3 small ones (to soften your beets, roast for 20-30 min at 425 or boil in water on the stove until soft)  

1/3 cup olive oil  

¼ cup tahini  

¼ cup fresh herbs (I like dill/cilantro/parsley)  

4 cloves garlic  

Lemon juice  

1 tsp cumin, 4 tsp coriander & 2 tsp onion salt 

Salt and pepper to taste  

2 tsp Eversio 6 Mushroom Blend

DIRECTIONS

1) Prep Your Spreads: Begin with the pesto and beet hummus. Combine all specified ingredients for each spread in a food processor or blender until well-mixed. Adjust seasonings according to taste.

2) Avocado Mix: In a bowl, mash the avocado with 1 tbsp fresh dill and cilantro, then season with salt and pepper to your liking. 

3) Toast Assembly: Toast slices of sourdough bread to preference. Spread a generous layer of beet hummus or pesto, followed by the avocado mix. Garnish with additional dill or cilantro, sprouts, and sesame seeds.
