Say hello to your new favorite banana bread! Velvety, naturally sweetened and boosted with mushrooms, this Healthy Banana Bread is perfect for breakfast, a midday snack, or a guilt-free dessert. Made with ripe bananas, Greek yogurt (or sourdough starter), and a blend of wholesome ingredients—including Eversio's 6-mushroom immunity blend—this recipe checks all the boxes for flavour and nutrition.

INGREDIENTS
- 2 ripe or frozen bananas
- 2 eggs
- 1 cup Greek yogurt or 1 cup sourdough starter
- ½ cup avocado oil or olive oil
- ½ cup maple syrup or honey
- 1 ½ cups oat flour or all-purpose flour
- 2 tsp Eversio 6 Mushroom Blend
- ½ tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp allspice
- 1 tsp sea salt
- ½ cup dark chocolate chips or chunks (plus extra for topping)
DIRECTIONS
1. Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
2. In a large bowl, mash the bananas until smooth. Add Greek yogurt (or sourdough starter), oil, and maple syrup. Mix well, then whisk in the eggs until thoroughly combined.
3. In a separate bowl, whisk together all dry ingredients: oat flour, mushroom blend, baking soda, baking powder, cinnamon, allspice, and sea salt.
4. Gradually fold the dry ingredients into the wet mixture. Stir gently to avoid overmixing.
5. Fold in the dark chocolate chips and pour the batter into the prepared loaf pan. Top with a few extra chips for that irresistible finish.
6. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
7. Let it cool slightly before slicing—then enjoy every nourishing, chocolate-studded bite!
