Spiced Sweet Potato Waffles featuring Balance Blend

If health is your goal for 2024, don’t deprive, healthify! Elevate your breakfast with these delish Spiced Sweet Potato Waffles with functional mushrooms that offer so many benefits!

• Sweet potatoes provide vitamin A for healthy eyes and immune function, plus your gut will love the fibre and antioxidants

• Gluten free oat flour is rich in B vitamins, as well as lower glycemic and less irritating to the gut than wheat flour 

• Adding functional mushrooms like Lion’s Mane, Maitake, Shiitake, & Reishi help to further protect the immune system, support hormone health, and improve mental agility.

INGREDIENTS

1 cup Sweet Potato (peeled, cut into cubes) 

2 Eggs 

2 Tbsp Pure Maple Syrup 

1 1/2 Tbsp Coconut Oil (divided) 

1 tsp Pure Vanilla Extract 

1 cup Oat Flour 

1 tsp Aluminium-free Baking Powder 

1 tsp Cinnamon 

1 tsp Balance Mushroom Blend by Eversio Wellness 

⅛ tsp Pink Salt 

Toppings:

3-4 strawberries, sliced 

2 Tbsp hemp seeds 

Maple Syrup to taste

DIRECTIONS

1. Boil the sweet potatoes until they are soft, roughly 6 min. Drain & add to the blender, along with eggs, maple syrup, two-thirds of the coconut oil, & vanilla extract. Process until blended.  

2. Add the oat flour, baking powder, mushroom powder & cinnamon & process until fully combined.  

3. Heat the waffle maker to medium heat & brush with some of the remaining coconut oil until well coated. Add enough batter to cover the bottom of the waffle maker & cook for three to five minutes or until golden brown & cooked through. Repeat with the remaining batter. 

To serve, top with maple syrup, strawberries, & hemp seeds if using. Makes 2 servings. Enjoy!
