Lemon Poppyseed Muffins Recipe

INGREDIENTS

  • ½ cup coconut flour
  • ⅓ cup honey
  • 6 organic eggs
  • ⅓ cup coconut oil (melted)
  • ¼ tsp Himalayan salt
  • 1 tsp 3 Mushroom Blend by Eversio Wellness
  • 1 lemon (zested and juiced)
  • 1 tsp pure vanilla extract
  • 1 Tbsp poppy seeds

DIRECTIONS

  • Preheat oven to 350ºF and line a muffin tray with unbleached liners.
  • Mix all ingredients in a large bowl until well combined.
  • Fill each muffin cup using a ¼ measuring cup of batter.
  • Bake for 35 minutes, then let cool before enjoying.

Recipe makes 9 muffins
