Lemon Poppyseed Muffins Recipe
INGREDIENTS
- ½ cup coconut flour
- ⅓ cup honey
- 6 organic eggs
- ⅓ cup coconut oil (melted)
- ¼ tsp Himalayan salt
- 1 tsp 3 Mushroom Blend by Eversio Wellness
- 1 lemon (zested and juiced)
- 1 tsp pure vanilla extract
- 1 Tbsp poppy seeds

DIRECTIONS
- Preheat oven to 350ºF and line a muffin tray with unbleached liners.
- Mix all ingredients in a large bowl until well combined.
- Fill each muffin cup using a ¼ measuring cup of batter.
- Bake for 35 minutes, then let cool before enjoying.
