INGREDIENTS (Serves 2):
  • 2 apples, sliced
  • 1 ½ tbsp coconut oil
  • 1 tbsp maple syrup
  • ¼ tsp cardamom
  • 2 cups unsweetened almond milk
  • 1 cup rolled oats
  • 1.5 scoops vanilla protein powder
  • ¼ cup chia seeds
  • 1 tsp Eversio Wellness 3 Mushroom Blend

DIRECTIONS

Step 1: Prep the Oats

Combine oats, protein powder, chia seeds, mushroom blend, and sea salt in a large bowl or container. Stir well, then pour in the almond milk and mix thoroughly. Cover and refrigerate overnight (or for at least 8 hours).

Step 2: Caramelize the Apples

Add sliced apples, coconut oil, and cardamom in a saucepan over medium heat. Stir and bring to a simmer. Cover with a lid and cook on low heat for about 10 minutes or until apples are soft and caramelized. Check occasionally and add a splash of water if needed. Stir in the maple syrup and remove from heat.

Step 3: Assemble & Enjoy

In the morning, divide the overnight oats into two bowls or mason jars. Top with warm caramelized apples, and enjoy a cozy, nourishing breakfast!
