Superfood Energy Granola Bars with Balance Blend

INGREDIENTS

Granola Mix  

1/2 cup almonds  

1/2 cup cashews  

1/2 cup shredded coconut  

1/2 cup hazelnuts  

1/3 cup pumpkin seeds  

1/3 sunflower seeds  

1 cup gluten free oats  

Optional: dried fruit of choice or dark chocolate bits

Coating 

1/2 cup honey  

1/2 cup tahini  

1/2 cup almond butter  

4 tbsp coconut oil  

1 tsp @eversiowellness functional mushroom blend  

2 tsp cinnamon  

1 tsp sea salt

DIRECTIONS

1Spread all your nuts, seeds, and coconut on a baking sheet and bake for 15 minutes at 325 degrees.

2. While these are roasting, in a medium saucepan on low heat add in all your coating ingredients and mix until all melted together.  

3. Place your roasted nuts and seeds into a large bowl and add your oats and mix in your coating.

4. Line a square baking dish with parchment paper and fill it with your granola mixture. Press this down with parchment paper to make sure it all sticks together and is packed together tightly.

5. Place it in the freezer for 1-2 hours to harden and then cut into bars. (Store in fridge or freezer).
